Scrambled Lou

Scrambled Lou

2 Tbs Lupine Flour
2 tsp Chickpea Flour
2 level tsp finely ground Psyllium Husk
1 Tbs virgin Olive Oil or virgin Rapeseed Oil
6 Tbs Water
3 generous pinches of Kala Namak (Indian Black Salt) (optional)

chopped Chives
Black Pepper
Salt

Mix lupine flour, chickpea flour, psyllium husk, oil, and water quickly and thoroughly. Add chives, pepper, salt, and other herbs, spices, and diced vegetables to taste.
Let everything sit for about 15 minutes.

Heat some oil* in a pan. Fry the mixture at low temperature, and turn and scramble it constantly until it has a firm consistency as desired. (This will take some time.)

Serve with bread or bagels and Francis’ Breakfast Slices!

*I use deodorized high oleic sunflower oil most of the time, but if you want something fancier, I suggest virgin peanut oil, avocado oil, or coconut oil for frying.
